If, like us, you have a passion for raw fish, you will love this voluptuous tartare recipe full of sweet flavours. To renew with your favourite fish according to the seasons and your inspiration.
600 to 800 g of tuna or other raw fish
A mix of raw vegetables of your choice (carrots and shredded cabbage, young shoots, etc.)
For the marinade:
2 tsp Pompona vanilla vinegar
3 tbsp Tahitensis vanilla olive oil
2 good pinches of salt with Red vanilla crush
2 pinches cayenne pepper
Guyana black pepper
1 c finely grated fresh ginger
2 stalks of chiseled chives
2 stalks of cilantro, chopped
2 stalks of Dill, chopped
Dice the fish.
Emulsify the marinade ingredients together, with the vanilla seeds if not already added to your oil and vinegar and mix with the fish. Alternatively you may replace vinegar with lime or lemon.
Add the entire vanilla bark in and let the fish marinate to chill in a cool place inside a non-metallic container for 60 minutes.
Adjust the seasoning if necessary and place with a round cutter on a bed of raw vegetables and young salads mix.
Sprinkle with fresh herbs and serve chilled, with sweet potato fries for instance.
