You can vary these bites as you please, replacing the fresh goat cheese with a fresh cow cheese, opt for melon, peach or mango, and drizzle with honey.

Ingrédients

For 15 bites:


  • 5 slices prosciutto (cured ham)

  • 15 tsp fresh goat cheese

  • 1 ripe papaya

  • Fresh chopped coriander

  • Fresh chopped dill

  • Guyana black pepper

  • Salt

  • 1 to 2 vanilla pods (1 Fresh Blue vanilla or 2 Bourbon Planifolia vanilla)








Préparation

Preheat your oven to 200°C.


Cut each slice of ham into three and garnish with mini muffin indentations, pressing down firmly on the sides.

Bake for 15 minutes. Take out the small crispy baskets thus formed and let them cool.


Top them with goat cheese, then a pinch of pepper and salt.


Using a melon baller, form 15 balls of papaya or melon flesh.

Arrange the papaya or melon marbles on the bites.

top a few of the vanilla seeds on the papaya marbles and a few fine sliced vanilla cuts around.

Add the fresh herbs and enjoy immediately.
